Today I went to Pura Vida Bakery & Bystro. Its a vegan restaurant kinda in the ghetto part of the art district (if thats not describing all of it) in Vegas. It was for a Las Vegas meet up in celebration of World Vegan Day and to raise money for Mercy for Animals. There was some local venders with things like yoga and reusable grocery bags ext. There was a DJ (actually 2) spinning some reggae and down tempo. We ordered the $15 special that was for the charity.
Here is the Special 3-Course Lunch Meal for $15:
First course: Harvesting Salad – straight from the farm to your plate with arugula, kale, spinach, spring mix, cilantro, oregano, apple, kiss of citrus, cranberries; all tossed in Strawberry Creek’s strawberry vinaigrette. Served with the salad is a cranberry nut bruschetta
Second course: Chipotle-yam Chili AKA the “Oh My Gosh” – warm up the chilly day with a hot bowl of chili served with Chef Mayra’s quinoa and wild rice stuffed squash. A perfect autumn holiday dish; this stuffed veggie entrĂ©e gets its protein from quinoa and nuts and the dried cranberry and sage gives it an almost holiday feel.
It also came with a dessert that you got pick from there case. They had cookies, brownies, pie’s, and may be one or two I forgot. I got the peanut butter chocolate pie and Leroy got a brownie with chocolate sauce (the brownie was better).
The food was very good. The salad was my favorite but I was craving one. The seasonal vibe was cool too with the squash and chili. They also have flavored waters which was unique. We tried the apple-orange and the mint oil (mint oil a bit funky). It also came with a dessert that you got pick from there case. They had cookies, brownies, pie’s, and may be one or two I forgot. This place is nice and I wish them much success in this business. If you eat raw, or vegan, or at all, this place food and flavor is great. Oh and the servers were friendly, (a little in the weeds) and nice but I guess thats to be expected with a hippie spot right.
